About Clase Azul Tequila Plata

Tequila is a drink, specifically a distilled spirit made in Jalisco (a small region of Mexico). If it is not made here, it cannot be called tequila. However, tequila is much more than that: it is a meeting point, a joining of two worlds (with its faithful fans and its skeptics). According to some studies, its origins date back to the 16th century when Spanish settlers began to distill the fermented juice of the blue agave. Now, five centuries later, this union is still happening and is more alive than ever (not everyone can boast about it). And companies like Clase Azul continue to prove it with their Clase Azul Tequila Plata.

Completely artisan and unaged. Clase Azul Tequila Plata 70 is a basic tequila, the first step into this universe of flavours and nuances. A very special tequila made in Los Altos de Jalisco. In this region, with a temperate sub-humid climate and reddish, mineral soil, blue agave grows. This plant, which looks like a giant pineapple, is a variety of the Agavaceae family (a plant native to Mexico) and tequila can only be made using it. Any other drink from another plant in this family will be a good spirit, but it can never be considered true tequila. This is key to avoid being taken for a ride, knowing that the production process of Clase Azul Tequila Plata is long and complex. Firstly, after removing the leaves from the plant (a process known as jima), the aim is to extract the sugars found in the heart of the plant. This is achieved by cooking in brick ovens, creating the must that will be fermented. In the case of Clase Azul Tequila Plata, this process is carried out using patented yeasts, achieving a unique and inimitable profile.

Finally, Clase Azul Tequila Plata will undergo a double distillation in copper stills. At Clase Azul, they are loyal advocates of time and the effect of wood in tequila. However, with Clase Azul Tequila Plata, the naturalness and the purest expression of the agave is highlighted, there are no barrels and no aging. Nothing like anything we’ve tried before.
