About Cénit Blanco
They say it's better to be talked about negatively than not at all. After all, the worst is indifference.
And that is precisely what happened for years with many old vines in the Zamora (Castilla y León) region. Simply put, no one spoke of them. Fortunately, there were those who looked beyond, paused where others passed by, and listened to what these forgotten vineyards still had to say.
This is how Viñas del Céntit came to be in 2004, a project aimed at giving voice to a nearly overlooked vinicultural heritage. Particularly to tempranillo, the star variety in this Vinos de la Tierra de Zamora area in Castilla y León. Yet, the land does not thrive on reds alone. José Manuel Beneítez, the project's oenologist, has ventured further by also reviving century-old vineyards of traditional white grapes, which for years were cast aside for not being "in vogue." Today, these forgotten varieties are the protagonists of a unique wine.
Céntit Blanco is a tribute to that hidden diversity: a natural blend of doña blanca, albillo, godello, verdejo, palomino… and other gems that have coexisted for over a century in small, forgotten plots. Old vines, indeed. But full of life.
The harvest is conducted manually, seeking not only ripeness but something essential: a vibrant natural acidity. After a meticulous selection, whole clusters are pressed without destemming. Fermentation is spontaneous, and just 3 days after it begins, half of the wine is transferred to French oak barrels where it rests without bâtonnage for 5 months. The remainder stays in a tank until the final blending.
The result is Céntit Blanco, a fresh, complex, and soulful white wine that breaks away from conventions and highlights what has always been there.
