We live surrounded by perfect models: those that seem to have been crafted in a laboratory to meet the most stringent standards. Wines used to be like this: flawless, always adhering to the rules, with a defined structure. But what happens when someone decides to break away from that? Natural wines are born.

Moisès Virgili of Celler 9+ knows this very well. Before becoming a winemaker, he spent many years in agriculture, and when his father retired, he saw an opportunity: to take over the family vineyard in La Nou de Gaià, Tarragona (Catalonia), and begin experimenting with what was then known as garage wine. In those early days, natural wines were on everyone's lips, but not exactly to be praised. Many winemakers laughed, as these wines did not follow the traditional "guidelines of perfection." But, as Virgili says, natural wines have something more. They are like those people who do not meet the standards, yet leave a profound impression. They are not "perfect," but they are authentic.

One such wine is Celler 9+ Escumós Ancestral 7E. This organic sparkling wine follows the ancestral method, where minimal intervention is the essence of the process. The blend of the indigenous varieties sumoll and macabeo comes from vineyards of organic agriculture, benefiting from the freshness brought by the sea breeze.

In the winery, the process begins with the pressing of the grapes, which ferment in stainless steel tanks for 12 days. Then, before the fermentation finishes, the wine is bottled, followed by a 12-month rest in the bottle.

Celler 9+ Escumós Ancestral 7E is a natural, free, and authentic sparkling wine, with a fine bubble and a rebellious character that defies traditional norms. It is not perfect, but it possesses something that "model" wines cannot offer: soul.
