About Cascina Carlot Fiori di Campo Moscato d'Asti
Carlos Marchisio, known as Carlòt, was the owner of a farmhouse and several hectares of land in Coazzolo, a municipality in northern Italy, in the province of Asti, Piedmont. With no children to take over managing the properly, Carlòt decided to give his land to Mario Mo, who then bought the farmhouse. This was the beginning of this family’s winemaking story. They dedicated themselves completely to the land and their legacy is now embodied in Cascina Carlot, a winery run by Claudio (Mario Mo’s grandson), where they make Cascina Carlot Fiori di Campo Moscato d'Asti, a sparkling wine from the D.O.C.G. Moscato d'Asti.
Muscat is the leading white variety in Piedmont. To make Cascina Carlot Fiori di Campo Moscato d'Asti, the grapes are taken from different vineyards, with an average age of 45 years old, growing at 300 metres above sea level on clay and calcareous soils with blue marl. They cultivate the vines in a way that respects the environment, but does not go as far as being organic. However, they do pay special attention to using natural fertilisers and not using any plastic material. At Cascina Carlot, willow tree branches are used to make resistant and flexible frames to tie the vines to (as was the case in the past, before plastic was commonly used).
The harvest, carried out by hand and in boxes, signals the start of the work in the winery, where the clusters are taken after a thorough selection. Only the best will undergo a short maceration, at about 20ºC, where the distinctive aromas of the Asti will be extracted and enhanced. After this, Cascina Carlot Fiori di Campo Moscato d'Asti is put in the press, where the must will be made, and vatted in stainless steel tanks. It will ferment there for seven days, until the yeasts have finished their work. But the journey of Cascina Carlot Fiori di Campo Moscato d'Asti does not end there. This wine now has 15 days of rest in the stainless steel tank, where it will remain in contact with its lees and undergo bàttonages, followed by 1 month in the bottle.
