Capçanes Peraj Ha’abib Pinot Noir is a barrel-aged kosher red wine made by Celler de Capçanes in the D.O. Montsant with the Pinot Noir red variety.
Capçanes is a cooperative founded in 1933 in the town of the same name in the Falset area (Tarragona) and is currently made up of 125 members. It spreads across a total of 250 hectares within the Montsant Denomination of Origin and since 1995, as well as their traditional wine collection, they have been producing kosher wines, made strictly in line with the rules of the Jewish community.
Capçanes Peraj Ha’abib Pinot Noir is made from vines that lie on the mountains in the town of Capçanes. These are two plots of 15-year-old vines lying 500 metres above sea level and planted on calcium and clay soils. They use traditional agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.
Once they reach the cooperative’s facilities, the grapes follow guidelines set out by a rabbi from Barcelona. To begin with Capçanes Peraj Ha'abib Pinot Noir macerate for 5-7 days and ferment at a controlled temperature between 24 and 28ºC in stainless steel tanks. Then malolactic fermentation takes place in 300-litre French oak barrels and finally ages in stainless steel tanks for 3 months before bottling.
Capçanes Peraj Ha’abib Pinot Noir is a high quality unpasteurised kosher wine vinified under the supervision of the Orthodox Union (OU) and suitable for Jewish Passover (Le Pessaj).
