About Can Ràfols dels Caus Clímax Rosé Brut Nature
The uniqueness of the creator is reflected in an excellent wine, which shows not only the characteristics of its place of origin, but also the personal style. In the case of Carlos Esteva, owner of Can Ràfols dels Caus, he stands out for respecting the particularities of the grapes and the land where they come from. Being one of the most fascinating estates in the world of Spanish wine, it is located in the massif of El Garraf (Barcelona), an area with low relief, rounded peaks and deep valleys, located 15 km from the Mediterranean Sea, where the calcareous terroir provides quality and minerality to its wines. Using different grape varieties and interpreting his environment in a very personal way, Carlos bottles a unique landscape with a distinct personality within the Penedès DO.
Among the wide range produced in this unique winery, we are presented with Can Ràfols dels Caus Clímax Rosé Brut Nature, a sparkling rosé made from pinot noir planted in the heart of the Garraf massif, on calcareous soils full of marine fossils. Environmentally-friendly agriculture is practised without using chemical products. After an exhaustive selection of the best grapes, they are macerated for a short period of time in the cellar. The first fermentation is carried out with native yeasts in stainless steel tanks, followed by a second fermentation in the bottle where it rests for a minimum of 30 months before disgorgement. Finally, it is brought to the market without adding expedition liqueur.
The result is Can Ràfols dels Caus Clímax Rosé Brut Nature, a fresh and seductive Mediterranean rosé cava that lives up to its name. The culmination of the natural balance between man and the environment.
