From Pythagoras to Nikola Tesla, from various religions to Isaac Newton, the number 3 has always been esteemed as a supernatural figure. In medieval Christian culture, it is a celestial digit symbolizing perfection, and there are numerous beliefs positing that the number 3 is sacred and intertwined with the divine. In the case of Bourgeois-Diaz Trois Cépages 3C Extra Brut, a champagne that, as its name suggests, is crafted from the three classic varietals of the AOC Champagne: Pinot Meunier, Pinot Noir, and Chardonnay, it undoubtedly approaches perfection. Produced by Jerome Bourgeois-Diaz, a fourth-generation vintner who has wholeheartedly embraced biodynamic principles for over a decade, this cuvée is a veritable gift from nature.

With 7 hectares of vineyard nestled in the village of Crouttes-sur-Marne, equidistant from Paris and Reims (AOC Champagne), Bourgeois-Diaz Trois Cépages 3C Extra Brut originates from vines of an average age of 35 years, rooted in silty-clay soil. Certified by Demeter since 2014, these vines are strangers to pesticides and synthetic substances. So much so that during the harvest, grapes bordering neighboring parcels that may have been tainted by synthetic treatments from other producers are meticulously excluded. In the winery, the grapes ferment with indigenous yeasts, one-third in oak barrels and two-thirds in stainless steel vats. Subsequently, the cuvée is assembled and undergoes a second fermentation in the bottle, resting for at least 27 months on the lees before disgorgement.

This is the genesis of Bourgeois-Diaz Trois Cépages 3C Extra Brut, a champagne characterized by astonishing complexity, crystalline purity and, as if that were not enough, an absolutely unbeatable quality/price ratio. Three attributes that skirt the edges of perfection.
