About Blanca Cusiné Brut Nature

Blanca Cusiné Brut Nature is an organic sparkling wine produced by the Parés Baltà winery with the Xarel·lo, Pinot Noir and Chardonnay varieties in the D.O. Cava.

Parés Baltà is a family winery located in the town of Pacs (Penedès). Today the third Cusiné generation, brothers Joan and Josep Cusiné Carol and their wives, María Elena Jiménez and Marta Casas (the winemakers), are in charge of the operation, making ecological wines and cavas from their own vineyards spread over 5 estates in Penedès. They also have the Gratavinum winery in the D.O.Q Priorat and Roman Domain in the D.O. Ribera del Duero.

Blanca Cusiné Brut Nature comes from vineyards on the family estate that have been cultivated under ecological premises, without using pesticides or synthetic chemicals. They use natural techniques like using sheep herds to fertilise vineyards and beehives to pollinate flowers to maintain the natural balance of the terroir and the strain. The harvest is carried out manually at the optimum moment of ripeness.

To make Blanca Cusiné Brut Nature, the Chardonnay and Xarel·lo varieties ferment in stainless steel tanks at a constant temperature of 16ºC. The Pinot Noir variety ages on lees for 2 months with battonage 3 times a week. Second fermentation takes place in the bottle according to the traditional method with a minimum aging of 30 months.

Blanca Cusiné Brut Nature is a limited production micro-cuvée cava with the finesse and elegance of a blanc de noir.

2015

Blanca Cusiné Brut Nature 2015 unveils an enchanting bouquet, where the spotlight falls on dehydrated fruits such as apricots and raisins, interwoven with toasted undertones and a delicate hint of apple and pear compote. Upon tasting, its introduction is sophisticated, marked by a harmonious acidity. The effervescence is gentle, bestowing a creamy texture that leads to a lingering finish, where reminiscences of toasted walnuts and almonds arise. A cava of subtlety and grace.

2011 Blanca Cusiné Brut Nature 2011 is a sparkling wine with complex aromas of fresh almonds and hazelnuts and notes of orange blossom honey and fresh figs. On the palate there are ripe candied fruits and hints of the fragrances from the nose.
2008 In the mouth, this cava is fresh and creamy. It has a nice attack and an elegant mid palate with a very refreshing and very well integrated fizziness. A long and mineral finish with light bitter notes finish rounding out this great cava.

Very bright straw yellow colour with pale golden reflections. It shows very thin, tidy and elegant bubbles which form a nice crown on the surface.

Subtle nasal aromas, plenty of nice nuances. Its notes of white stone fruit and citrus and its aromas of ripe tropical fruits, flowers and grass give way to intense notes reminiscent of nuts, bakery aromas and light toasted notes.
2007 Notes of preserved fruit together with flavors of almonds and honey. Long and complex finish.

Yellow color with golden hints.

On the nose complex and subtle aroma with delicate notes of almonds, hazelnuts, honey and prickly pear. In the mouth it is fresh and round.
