Bestué Finca Santa Sabina Crianza 2022 boasts an alluring ruby red hue with violet highlights. About Bestué Finca Santa Sabina Crianza
The world of wine speaks a common language. And that is the language of Cabernet Sauvignon. It is cultivated in all countries. Everyone understands it. Everyone knows it. And everyone manages to get excited and communicate with the complex, strong and intoxicating reds that are so characteristic of this grape. In Spain, thanks to the Marquis of Riscal (who introduced it in the mid-19th century), this language has become the official language of various denominations: Rioja, Ribera del Duero, Penedés and Somontano (where it is the main variety). And experts in this language, at professor level, set up the Otto Bestué winery where they make Bestué Finca Santa Sabina.
Few words are needed to present this red wine, a blend of Cabernet Sauvignon and Tempranillo. However, although Bestué Finca Santa Sabina is a coupage, this will not stop you from fully discovering the nature and personality of the Cabernet Sauvignon. As a general rule, Cabernet Sauvignon is a complex and very versatile variety which most winemakers have the courage to experiment with, and which usually always appears blended with other red varieties. Its powerful aromas and flavours, ranging from blackcurrant to cigar box, often mask other nuances. It’s like when you go out with that full-on colleague, who is totally captivating and charming, who always stands out and ends up overshadowing everyone else.
This red wine is produced by Otto Bestué, the legendary winery of the D.O. Somontano founded in the 17th century. From generation to generation, and from the town of Enate, this family has worked the vineyards, managing to get the best out of this denomination, which is still not well known, but which has proven itself by maintaining great quality. Currently, this family business has 45 hectares of vineyards divided into five estates: Mezquita, La Sierra, El Plano, Rableros and Santa Sabina. The latter is where the grapes for Bestué Finca Santa Sabina Crianza are grown. Here, in the heart of the province of Huesca and at the foot of the Pyrenees, the great mixture of soils and the contrasting weather conditions the vines are exposed to stand out.
The production of Bestué Finca Santa Sabina begins in October, in the first week, when the grape harvest begins. This work is always done by hand, using 20 kg boxes and at dawn (to avoid the hottest and sunniest hours). From the vineyard, the bunches are taken directly to the winery, where they are destemmed and undergo cold maceration in stainless steel tanks, which lasts about six days. Fermentation takes place in this same container, always in a slow and controlled manner, making the necessary checks to ensure that everything is going well. During this process, it is essential to work with the cap (the layer of skins formed on the surface), which will be pumped over. To make Bestué Finca Santa Sabina, there are two of these: one in the early morning and one in the late afternoon. After this work, it is time for devatting and racking into barrels, where malolactic fermentation and aging takes place (for at least 14 months).
For several centuries Otto Bestué has been one of the great promoters who has worked very hard to get some recognition for the D.O. Somontano. Much has to do with its development and growth. This winery currently has a presence in three of the five continents. There is no better ambassador than Otto Bestué and no better letter of introduction than Bestué Finca Santa Sabina.
