About Bardos Verdejo

As they themselves assert, Vintae is "not just a wine company, it's a new way of living wine"; thus, it's unsurprising that this group (founded by José Miguel Arambarri Terrero in 1999) has a presence in the D.O. Rueda. The soils in the south of the province of Valladolid, where the terrain is predominantly gravelly—poor in organic matter yet rich in calcium and magnesium—proved an irresistible temptation for this group of enthusiasts who already produce wine in eleven other appellations. From this venture emerged Bardos Verdejo
 
The remarkable personality and character of Bardos Verdejo are its standout qualities, marking it as one of the finest single-varietals from the region you can taste. This presence and temperament are directly inherited from the Verdejo, an indigenous grape first planted by the Mozarabs in the 11th century. At least, that's what history tells us, citing the repopulation of the Duero basin as the beginning of this grape's long journey in the area. This was achieved through the Verdejo's excellent adaptation to the climate, enduring the harsh winters and the scorching, dry summers. This latter detail is not only crucial for the plant but also for the viticulturists and field workers who must sometimes contend with these conditions. In fact, the harvest, conducted at night, takes place at temperatures below 15°C, with the remaining tasks scheduled during times when the sun offers some respite. The vines of Bardos Verdejo are old (between 20 and 25 years) and are situated in Rueda, at an altitude exceeding 700 metres. 
 
Another significant aspect of Bardos Verdejo is its production through cryomaceration, a process typically associated with reds but also well-suited to these aromatic whites. Specifically, this technique, which originated in France in the late 1970s, involves subjecting the grape clusters to very low temperatures (between 4°C and 15°C) to extract the maximum amount of aromas and flavour. The cold causes the yeasts to become dormant, delaying the onset of alcoholic fermentation, allowing the grape berries to break under their own weight, releasing anthocyanins (polyphenols that impart colour), tannins (more prevalent in red grapes), aromas, and sugars (which will later be utilized by the yeasts). 
 
Following this process, always conducted in an inert atmosphere, Bardos Verdejo undergoes gentle pressing in a pneumatic press and is left to settle, allowing it to clarify by gravity. Once clarified, Bardos Verdejo is ready to undergo fermentation—with indigenous yeasts and at a controlled temperature—and to rest for at least four months on its lees.
