About Anna de Codorníu Brut Rosé
Anna de Codorníu Brut Rosé is a rosé cava produced by the Codorníu winery in the D.O Cava.
Codorníu was the name of the family of wine producers where their tradition dates back to the 16th century. In 1872, the Codorníu family afilliated with the Raventós family and together started producing cava in the Penedès with the foundation of the Codorníu winery in Sant Sadurní d'Anoia (Barcelona).
Anna de Codorniu Brut Rosé is their most prestigious rosé cava from the series Anna de Cordoníu, produced in homage for the last person that carried the family name.
Anna de Codorniu Brut Rosé is produced from the Pinot Noir (70%), and the varietal most commonly used in cava, Chardonnay (30%).
The grape originates from the wineries own vineyards in Lleida, with the most continental climate in the D.O Cava, this gives the grapes a better concentration and aromatic intensity with less acidity.
The harvest is completed at the end of August, during the night to maintain the grapes' freshness and to prevent oxidation.
For production, the varieties are separately. Pinot Noir, after having been destemmed, it is placed in contact with its husks for 3-4 hours, subsequently the must is filtered (already rosé colour) and then fermented at a controlled temperature.
The wine is now bottled and stored in underground cellars where it will undergo a second fermentation process to produce the desired cava, after which it is aged for a further 12 months.
