About Albert Bichot Vieilles Vignes de Chardonnay
Wine, heritage, tradition, exclusivity, terroir... These terms can all be ascribed to Domaines that lie alongside each other in Burgundy (France). These areas are home to winegrowers who have been taking care of the best soils for centuries and who defend their way of doing things and their tradition from large corporations. While some of the families are part of the aristocracy, others have earned their reputation over time; some have a larger production and others have small productions. However, they all have one thing in common: their commitment to maintaining their own vineyards and family management. Part of this group is the French Bichot family, who settled in Burgundy in 1933 and, from then until now, the winery has had more than 100 hectares of their own vineyards spread throughout Burgundy, from Chablis to Beaujolais. An exquisite heritage that allows Albéric Bichot, sixth generation and the visible face of the Albert Bichot winery, to produce wines of the highest quality that help to preserve the reputation of this wonderful wine region of France.
An example of this good work can be found in Albert Bichot Vieilles Vignes de Chardonnay. This wine comes from 25 to 30 year old vineyards in the Côte de Beaune and Hautes-Côtes de Beaune. These are Chardonnay vines planted in varied plots with clay and limestone soils, at different altitudes and exposures. They are grown organically without any harmful chemicals and, once the grapes reach optimum ripeness, they are carefully harvested and sorted. In the winery, the grapes undergo a rigorous selection and destemming process. Once the must is obtained, 30% is vinified in stainless steel tanks and the rest in French oak barrels for 5 to 6 weeks. The wine is then aged in these same barrels for 8-12 months.
