Beyond the controversy, 818 Tequila Añejo is a tequila distinguished by its production process, where the brand collaborates closely with local farms in Jalisco, Mexico, where small families handcraft this tequila, aged for over a year in oak barrels.
 
The story of 818 Tequila Añejo begins with the work of the jimadores, experts in cultivating agave, the plant from which all the juice and essence of this drink are derived. In the case of 818 Tequila, the company partners with the largest producer of organic Blue Weber agave, located in the Tequila Valleys, specifically in Amatitán, where the plant takes approximately six years to reach maturity. At this stage, the finest plants for 818 Tequila Añejo are meticulously selected and transported to traditional twenty-ton brick ovens, where they are cooked for 30 hours at over 96 degrees.
 
The next step involves crushing the cooked agave in motorised stone tahonas, using an 800-kilogram stone. This process is also artisanal, having been performed for centuries in the production of this beverage to obtain the must, which is subsequently fermented in unique wooden and stainless steel tanks. This process, conducted with agave fibre residues inoculated with indigenous yeasts, lasts approximately 48 hours. Finally, to achieve the end result, 818 Tequila Añejo 70 is distilled twice in handcrafted copper stills. During the first distillation, the alcohol content reaches 24 degrees; in the second, it rises to 48 degrees. Unlike other conventional tequilas, 818 Tequila Añejo rests for approximately one to three years in French and American oak barrels. Nevertheless, once bottled, the shelf life of 818 Tequila Añejo is not confined to this container, as the residues and other by-products are repurposed for various uses, such as the creation of traditional adobe bricks.
