About Muster Graf Morillon
Muster Graf Morillon is a natural, ecological and biodynamic, barrel-aged white wine made by Sepp & Maria Muster in Weinland Österreich, Steiermark (Austria) with the Morillon variety.
Maria and Sepp Muster are a couple of winegrowers who are known to be pioneers of biodynamics. They set up their project in 2000 on 10 hectares of family land in the Austrian town of Styria and in 2003 all the vines were certified biodynamic. All their wines are natural and are valued for their liveliness, authenticity and character.
Muster Graf Morillon comes from 30 year old vines. These are strains lying on steep slopes in soils made up of limestone and clayey silt, which is known locally as “opok”. They are cultivated using biodynamic viticulture and organic products, plant-based treatments and using the astronomical calendar as a reference. The yield is limited (3000 kg / h) and the harvest is carried out manually.
In the winery, the destemmed Muster Graf Morillon grapes ferment spontaneously with native yeasts in 1,200-litre wooden barrels. The wine is then transferred to 225-litre barrels where it remains for 44 months. Finally, the wine is bottled without clarifying or filtering.
As the producers explain, Muster Graf Morillon is born between the earth and sky. A biodynamic wine with a very good structure and a marked mineral character.
