About French Bloom La Cuvée Vintage Blanc de Blancs

Who said non-alcoholic wines lack appeal? This emerging trend has already found its way into the finest restaurants and the most luxurious wine lists, such as French Bloom La Cuvée Vintage Blanc de Blancs, a sparkling wine produced exclusively in the best years. 
 
After four years of research led by Rodolphe Frèrejean-Taittinger, French Bloom has succeeded in crafting a complex and high-quality non-alcoholic wine. The secret? From the outset, the wine was designed to be dealcoholised. Unlike other producers, who create good wines that then lose their strength, French Bloom La Cuvée Vintage Blanc de Blancs was conceived to undergo the final process that defines it. This begins with the raw material: organically grown Chardonnay grapes from Languedoc in southern France. Only in this region can one find the best grapes to achieve the fullest flavour possible. In fact, for French Bloom La Cuvée Vintage Blanc de Blancs, the clusters are harvested two weeks earlier than the rest of the crop, resulting in very high acidity that nothing can diminish, not even the three-step vacuum dealcoholisation process: from 12% to 2%, from 2% to 0.5%, and finally to 0.0%. This final process, the most critical, occurs at under 32°C, allowing for slow evaporation without boiling the wine. This technique results in a 60% loss of the wine's aromas, hence the need to exaggerate the aromatic profile at the beginning of the process. 
 
As soon as French Bloom La Cuvée Vintage Blanc de Blancs enters the winery, it goes to the press, and the must is extracted. A portion is transferred to new 225-litre French oak barrels, where it will age for about six months; another portion goes directly to stainless steel tanks where fermentation will take place. At the right moment, both batches will be blended, achieving the distinctive character of French Bloom La Cuvée Vintage Blanc de Blancs. Regarding the bubbles, this gas comes directly from the wine's carbonation, producing a very fine and persistent bead. Finally, French Bloom La Cuvée Vintage Blanc de Blancs is quickly pasteurised.
