About Domaine Bonnardot Hautes-Côtes de Beaune Sur Evelle

The appellation Côtes de Beaune refers to the wines produced in a series of communes along the slopes of the Côte d'Or in the Burgundy region. Conversely, the appellation Hautes-Côtes de Beaune pertains to the wines crafted from the higher elevations situated directly behind the Côte d'Or. Although both are Burgundian wines, each appellation's offerings are distinct in terms of soil composition, altitude, and climatic conditions. No one understands this better than the Bonnardot family, who have been vintners since 1470 and work with 18 appellations. A project that in the 1970s, Elisabeth, mother of the current custodians (Ludovic and Emilien Bonnardot), strategically redirected to showcase the influence of terroir on each of their wines. To achieve this, she converted the entire estate to organic farming and placed a significant emphasis on natural vinification processes. A comprehensive transformation that her sons now continue with the same level of dedication.

Among the selection of wines representing the various villages of the region, Domaine Bonnardot Hautes-Côtes de Beaune Sur Evelle is a red wine made from pinot noir grapes sourced from a plot located just above the village of Évelle, in Hautes-Côtes de Beaune. The vineyards are situated at an altitude ranging from 440 to 490 meters and are cultivated according to ecological principles. In the winery, the grapes, 50% of which are whole clusters, ferment with indigenous yeasts and undergo a lengthy 30-day maceration in wooden vats, with no additional inputs. Afterwards, the wine matures for 12 months in oak barrels. It is then bottled unclarified and unfiltered.

An outstanding altitude, warmer temperatures, and a 100% ecological approach have culminated in Domaine Bonnardot Hautes-Côtes de Beaune Sur Evelle, a limited-production red wine that is fresh, fruity, and luscious, epitomizing the quintessence of the AOC Hautes-Côtes de Beaune.
