About Domaine Bonnardot Pommard
Pommard, one of the most renowned and esteemed appellations in the Burgundy wine region of France, boasts a plethora of highly acclaimed producers, some of whom have been crafting wines in the area for numerous generations. The Bonnardot family is among them. As vintners since 1470, they cultivate a total of 21 hectares spread across 18 Burgundy appellations, including Pommard. Here, Ludovic and Emilien, the latest generation of the Bonnardot lineage, produce Domaine Bonnardot Pommard, a wine that remains true to the work philosophy of their mother Elisabeth, emphasizing organic farming and natural winemaking.
Hailing from a plot situated at the heart of the hill, demarcated by dry stone walls, Domaine Bonnardot Pommard is a single-varietal Pinot Noir planted in stony clay-limestone soil. It originates and thrives in an area surrounded by diverse fauna and flora at an altitude of 310 meters above sea level. The cultivation is organic, incorporating biodynamic treatments, and the harvest is done manually at the optimal point of ripeness. Once at the winery, the grapes are sorted on a selection table and then gently pressed as whole clusters with extended maceration. Fermentation occurs with indigenous yeasts in oak foudres, followed by maturation in oak barrels for 14 months. The wine is ultimately bottled unclarified and unfiltered.
