About Bourgeois-Diaz Meunier Extra Brut
Traditionally, alchemy has been perceived as a process through which scholars from various eras have endeavored to transmute lead into gold. Yet, behind this notion lies a far more profound and personal meaning, reflecting the human psyche and our intrinsic capacity for transformation. In the winemaking realm, today we encounter true alchemists who, in the creation of wines, do not engage in mere chemistry but instead follow the rhythms of nature to encapsulate the very essence of an enchanted land in a glass. Jerome Bougeois Díaz, a fourth-generation winemaker, embodies this work philosophy. A biodynamic pioneer in the region of Champagne, specifically in Crouttes-sur-Marne, he cultivates his 7 hectares of vineyard like genuine gardens, and his wines are veritable masterpieces.
Adhering to the principles of Demeter since 2014, we discover impeccable offerings such as this Bourgeois-Diaz Meunier Extra Brut, a sparkling wine crafted from pinot meunier grapevines from the estate's oldest plots, rooted in silty-clay soil. Certified organic and biodynamic, these vines are untouched by pesticides or synthetic substances. In the winery, the use of chemical yeasts or any artificial additives is strictly forbidden, and each step is driven by a profound harmony characteristic of artisanal methods. Initially, the must undergoes fermentation with indigenous yeasts—1/3 in oak barrels and 2/3 in stainless steel tanks. Subsequently, a cuvée is created, followed by the second fermentation in the bottle, with a minimum of 27 months of aging. Finally, the wine is disgorged with the appropriate dosage of expedition liqueur to be labeled as Extra Brut.
