About Bourgeois-Diaz Le Temple Blanc de Blancs
Since the philosopher and scientist Dr. Rudolf Steiner delivered his lectures to farmers in 1924, science has come to acknowledge the presence of spirit in nature. An approach to agriculture, horticulture, gardening, and overall food cultivation from a holistic, ecological, and ethical perspective. Today, this practice is embraced by a multitude of farmers and researchers, and it is through their collaborative efforts that biodynamics has continued to develop and evolve. Nowadays, it can be applied anywhere food is produced. In viticulture, biodynamics is a common practice in many estates, although there are always pioneers who have been implementing biodynamic principles for a long time. Such is the case with Jerome Bougeois-Díaz, a fourth-generation vintner located in the Crouttes-sur-Marne area, halfway between Paris and Reims (AOC Champagne), who cultivates his 7 hectares of vineyards as if they were a garden, utilizing elements provided by nature to create wines that are not the product of chemistry, but of alchemy.
Thanks to this dedication, the outcome is truly worthwhile. Sparkling wines like Bourgeois-Diaz Le Temple Blanc de Blancs are testament to this. A cuvée of chardonnay from the single plot "Le Temple", so named for its exceptional location and treated as a veritable temple. Located in Nanteuil sur Marne, its soils are composed of clay, silt, and chalk and are bordered by the peaceful waters of the Marne. The vines have an average age of 35 years, have been cultivated without pesticides since 2009, and have been certified organic and biodynamic since 2014. Once they reach optimal maturity, the grapes are handpicked in the vineyard. In the cellar, the grapes are vinified, 66% in stainless steel and 33% in oak barrels, with indigenous yeasts. This is followed by a second fermentation in the bottle, in the champenoise style, with an ageing period of between 24 and 30 months.
Considering that Jerome allows the wine to express itself at its own pace, Bourgeois-Diaz Le Temple Blanc de Blancs is the pure expression of "Le Temple", a plot that enjoys an exceptional exposure, a unique soil of limestone marls, and the care of a true alchemist. A pure homage to the chardonnay.
