About Bourgeois-Diaz Blanc de Noirs Extra Brut
With the advent of chemical use in the 1940s, the soil—which had hitherto been quite healthy—yielded positive outcomes; crop yields increased. However, over time, the chemical dosage has escalated, and gradually, the soil has lost its richness. Presently, the soil lacks the organic matter that nourishes plants, rendering the ground infertile. This is where biodynamic farming comes into play, a return to simplicity aiming to restore the soil's intrinsic vitality. Natural treatments, once employed by our forebears, where celestial bodies and the moon play a pivotal role. One individual who wholeheartedly embraces biodynamics is Jérôme Bourgeois-Diaz, a fourth-generation vigneron, regarded as one of the forerunners of biodynamic practices and who has been crafting some of the most compelling sparkling wines in Crouttes-sur-Marne, nestled by the Marne River, equidistant from Paris and Reims, within the prestigious AOC Champagne.
Adhering to stringent viticultural methods that implement biodynamic principles, he introduces Bourgeois-Diaz Blanc de Noirs Extra Brut. A cuvée of Pinot Meunier and Pinot Noir sourced from 7ha of vines averaging 35 years of age, rooted in clay-limestone soils. The use of herbicides, fungicides, and other chemical treatments is strictly forbidden, and native wild plants are allowed to intersperse among the rows to enhance microorganism diversity. Throughout the year, the biodynamic lunar calendar is meticulously observed, and all vineyard labor is conducted manually. In the winery, the grapes ferment with indigenous yeasts and minimal sulfite use, with 50% aged in stainless steel vats and the remaining 50% in oak barrels. Subsequently, the wine undergoes a secondary fermentation in the bottle, maturing for 30 months on lees.
