About Baigorri Negu
At first glance, it appears to be merely a glass box suspended amidst vineyards. Yet, those who venture into Bodegas Baigorri uncover a subterranean realm where gravity reigns and wine is crafted unhurriedly, with surgical precision and an unwavering respect for the grape.
Nestled in Samaniego (Álava, Spain), sheltered by the majestic Sierra de Cantabria, this winery astonishes not only with its avant-garde architecture but also with its unique approach to understanding wine.
Baigorri is one of the most modern voices of the DOCa. Rioja. Since its inauguration in 2002, its philosophy has been clear: tradition reinterpreted with cutting-edge technology and contemporary aesthetics. The winery, designed by architect Iñaki Aspiazu, is much more than an iconic building; it is a temple dedicated to wine, where the force of gravity replaces pumping machines, and quality begins at the vine itself. With seven underground floors, Baigorri has transformed respect for the grape into an exact science.
Baigorri Negu is the ideal red wine for taking the first steps into the world of wine without sacrificing authenticity. Crafted from tempranillo grapes—some destemmed, others vinified with the whole cluster—this wine undergoes fermentation in open stainless steel tanks, extending maceration to achieve a true aromatic expression and a silky texture. Selection is done berry by berry using artificial vision technology, and the musts are pumped over by gravity. After malolactic fermentation in wooden vats, the wine is refined for four months in French oak, acquiring smoothness and harmony.
