About Xesteiriña Do Biolo
If the phrase 'to be an altar boy before becoming a monk' is used to indicate that, before becoming an expert, one must first be an apprentice, José Manuel Domínguez, a third-generation farmer, firmly believes that before becoming a winemaker, one must be a gardener. This is a definitive statement of intent that defines his personal project located in his hometown of Sanxenxo, in the Valle del Salnés, Galicia (Spain). An agronomist who, using an ancient clone of albariño and a wholly natural approach, plants his own vineyard in a granite plot known as Granodiorita de Sanxenxo and applies all his expertise in the field. Under the brand Acios da Xesteiriña, the name of the plot, he unveils the full richness of the terroir through meticulous observation and absolute respect.
However, while in his first wine, Xesteiriña, he seeks to capture the utmost purity of the albariño from this unique plot, in his second wine Xesteiriña Do Biolo, he aims to recreate the traditional albariño, the wine that has always been enjoyed in the area. Vines aged 35 years are treated minimally, allowing the grapes to develop their own distinctive character. In the winery, while Xesteiriña is derived from the free-run juice, Do Biolo is crafted from the final press fraction. Direct pressing without destemming is followed by an ultra-gentle settling for less than 24 hours with a homeopathic dose of sulphur. From here, it goes directly into a 300-litre stainless steel tank and a 225-litre Bordeaux oak barrel of several uses where it ferments spontaneously with native yeasts and without temperature control. Finally, the wine remains in these same vessels for 8 months and is bottled with a minimal dose of sulphur (15 mg total).
Thanks to his experience and keen intuition, José Manuel manages to preserve the essence of the grape to the fullest in Xesteiriña Do Biolo. As a result of such precise yet respectful intervention, he ensures that each bottle purely and honestly expresses the unique character of this corner of Galicia.
2022 |
Xesteiriña Do Biolo 2022 is a white wine with a captivating golden and luminous hue. On the nose, it reveals slightly oxidative aromas reminiscent of fruits such as apricot and plum, accompanied by notes of grapefruit and yellow flowers. There are also balsamic hints of bay leaf and a mineral undertone reminiscent of stone. On the palate, it is dry, with a medium structure and good acidity. Its saline character and a bitter finish leave impressions of grapefruit and minerals, offering a creamy texture. |
