About Paragraph

A decade ago, walking into a café and ordering a cortado with oat or almond milk might have elicited, at the very least, a raised eyebrow. Today, however, it's almost an automatic gesture. The way we eat, drink, and take care of ourselves has fundamentally transformed. Greater awareness, enhanced health, and increased attention to what benefits—or harms—the body and mind.

In this same cultural shift, where healthiness has become aspirational, wine has also entered a new era. Perhaps the most striking movement is that of alcohol-free wines. What once sounded like a peculiar experiment or a soulless concession is now beginning to establish itself as a category with its own identity. It is not a substitute; it is an alternative.

In this context, Paragraph emerges, a new initiative aiming to elevate de-alcoholised wine to the realm of contemporary sophistication. Behind the project are American executive Steve Arora and Chief Winemaker Duncan Shouler, with a clear vision to demonstrate that an alcohol-free wine can also possess complexity, depth, and gastronomic appeal.

The process for crafting Paragraph is not about "removing something" from the wine, but rather about intentionally building it from the outset. High-altitude vineyards in Castilla (above 700 metres), without additives, and a de-alcoholisation through vacuum distillation at low temperature that preserves aromas, structure, and complexity.

The result is a dry, vinous, sophisticated, and deeply gastronomic tempranillo, designed to complement dining, conversation, and ritual, even when alcohol ceases to be the main focus.
