About Chivite Las Fincas Rosado
A fine dining experience is an excellent reason to gather, now more than ever, with friends and family, and enjoy moments that will linger in our memory. Chivite Las Fincas Rosado is born from the camaraderie that forms around a fine dining table, in this case, between two great friends, Julián Chivite, who is well-versed in wines, and the chef Juan Mari Arzak, one of the finest exponents of haute cuisine. The result? A perfect pairing that gives rise to Chivite Las Fincas Rosado, an exclusive wine, limited edition, and numbered.
Chivite Las Fincas Rosado is produced in Villatuerta (Navarra) by the Grupo Chivite within the designation, V.T. 3 Riberas. This company, currently owned by the Grupo Peralada, was founded in 1647. Since then, the surname, through its various generations, has always been synonymous with quality, love, and passion for a craft where they have demonstrated their capabilities. In 2017, this family business would pass into the hands of the Catalan giant, who has managed to maintain the quality standards that have always defined Chivite.
Chivite Las Fincas Rosado is crafted from garnacha and tempranillo from the Finca de Legardeta, situated between the Pyrenees and the Ebro River basin. This area, at an altitude of 450 meters, consists of clay and limestone soils. Here, where a Mediterranean climate with Atlantic-continental influences prevails, there is a significant thermal amplitude between day and night, promoting the ripening of red grapes and achieving a delightful acidity. All tasks are carried out with complete respect for the environment, always seeking a traditional vinification.
After the harvest, Chivite Las Fincas Rosado arrives at the winery, where it is crushed and processed, undergoing maceration and obtaining the must by gravity. This method, in which the grapes are allowed to drain, is known as the bleeding method and is used in processes where a high-quality must is desired, which then transforms into a wine of great aroma and flavour. Chivite Las Fincas Rosado ferments in stainless steel tanks at low temperatures for 21 days and is left to rest on its lees for several months before bottling.
