Chandon de Briailles Savigny-les-Beaune 1er Cru Lavieres is an ecological and biodynamic, barrel-aged red wine made by Chandon de Briailles in the French Denomination of AOC Savigny-Les-Beaune/Côte-d'Or (Burgundy) with the Pinot Noir variety.
Chandon de Briailles is a historical family estate dating back to 1834. Since 1988, it has been run by the de Nicolay family who have been producing traditional wines from one of the great Côte d'Or terroirs in the municipalities of Aloxe, Ladoix and Pernand-Vergelesses. However, seeing the damaging effects of chemical products, they decided to work all the vineyards ecologically and convert them to biodynamic. This change has seen some great results, producing radiant, pure and highly mineral wines.
Chandon de Briailles Savigny-les-Beaune 1er Cru Lavieres comes from 1 hectare of vines planted in clay soil and yellow marls in Aux Fourneaux as well as 0.6 hectares of vines on limestone soil in Les Saucours. These vines were planted between 1960 and 1976 and since 2008 they have been Demeter biodynamic certified. All their work is manual with the help of animal traction.
The Chandon de Briailles Savigny-les-Beaune 1er Cru Lavieres grapes are carefully selected and partly destemmed. They are placed in open vats to ferment spontaneously with native yeasts and without adding any oenological products other than minimal sulphur. The wine then ages for 14 to 18 months in old barrels and with minimal racking to avoid oxygenation. Finally, the wine is bottled without clarifying or filtering.
Chandon de Briailles Savigny-les-Beaune 1er Cru Lavieres is the fruit of renewed tradition. A full, rich and flexible wine that fully expresses the Pinot Noir variety through completely biodynamic practices.
