About Ca' del Bosco Vintage Collection Dosage Zero
In 1964 Annamaria Clementi Zanella bought Ca' del Bosco, a modest property in the hills of Erbusco, in Lombardy (northern Italy). A house and two hectares of oak and chestnut trees. And that’s about it. Today, all this has become Ca' del Bosco, one of the most renowned sparkling wineries in northern Italy.
In principle, we don’t know what Annamaria’s initial plans were. Perhaps she wanted to dedicate this land, rich in sand and silt with lots of stones, to something other than vineyards. What is clear is that everything that Ca' del Bosco is today is thanks to Antonio Gandossi, the winery’s manager, who in 1968 decided to make bubbles. Since then, Ca' del Bosco has always been famous for its sparkling wines, made in the heart of Lombardy and protected by the D.O.C.G. Franciacorta Millesimato (many even say they are on par with what they make in the A.O.C. Champagne). In this area, which includes towns and villages like Erbusco, Adro, Cazzago, San Martino, Corte Franca and Passirano, Ca' del Bosco owns several hectares of Chardonnay, Pinot Bianco and Pinot Nero which they use to make their Ca' del Bosco Vintage Collection Dosage Zero dry sparkling wine.
Only the best of the best can be part of Ca' del Bosco Vintage Collection Dosage Zero. It is very common here, very close to Lake Iseo, where the heat is humid, that some of the clusters are covered in fungus and rot. For this reason, the grapes, which are spread across 26 plots, are harvested during the first days of August and meticulously selected. Not every cluster is worthy of moving on to the next stage of processing, the one that takes place in the ‘spa’. This is how Ca' del Bosco refers to this phase, where the bunches pass through a washing tunnel with jets and finish in a drying tunnel. From this point on, where the quality of the raw material has already been assured, the Ca' del Bosco Vintage Collection Dosage Zero production process is marked by the absence of oxygen. The first of these processes, where there is no air, is the press where the must is made and then transferred to French oak barrels. It is in these tanks that Ca' del Bosco Vintage Collection Dosage Zero becomes wine. It spends about five months here in contact with the wood and its lees. Each of the plots is vinified separately, and when the time comes to make the coupage, different amounts of each are blended. Once blended, Ca' del Bosco Vintage Collection Dosage Zero is bottled (also without oxygen) and left to settle for approximately 48 months, allowing the bubbles to appear with the second fermentation.
After this time, Ca' del Bosco Vintage Collection Dosage Zero is disgorged, eliminating its lees and creating a carefully crafted sparkling wine. Ca' del Bosco Vintage Collection Dosage Zero is the third part of a fantastic trio. Together with Ca' del Bosco Vintage Collection Vintage Saten and Ca' del Bosco Vintage Extra Brut, this sparkling wine is part of an irresistible range.
