About Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre

Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre is a barrel-aged white wine made by Billaud-Simon with the Chardonnay variety in the French denomination AOC Chablis Premier Cru, in Burgundy (France).
 
Billaud-Simon is a Burgundy winery with a long winemaking history. The winery is now run by Bernard Billaud and his nephew Samuel Billaud who have put a lot of work into updating the winery. They hired prestigious winemaker Pierre Lédé as well as modernising all the processes in the vineyard and winery. As a result they produce pure, mineral and very elegant wines. 
 
Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre comes from a 30 hectare vineyard with well drained soils, mainly composed of kimmeridgian (clay and limestone). The team use environmentally friendly agriculture to preserve the natural balance of the terroir and the harvest is carried out manually when the grapes reach 12º or 13º.
 
The Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre grapes go through an pneumatic press and the must undergoes a cold maceration for 5 to 7 days. Fermentation lasts between 15 and 18 days and the wine ages for 14 months and is extracted twice before being bottled.
 
Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre comes from Chablis, a village known as the “Golden Gate of Burgundy”. With the best expression of the terroir, this is a place you can produce fantastic, pure wines with rich minerality.

Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre 2019 is a white wine with a distinct mineral profile. The bouquet is refined, featuring hints of ripe fruit. On the palate, it retains its mineral essence, complemented by stony nuances.
2018 Billaud-Simon Chablis Grand 1er Cru Montée Tonnerre 2018 is a profiled white wine with aromatic notes of white fruit, citrus and hints of chalk. On the palate it is fruity and textured with a certain tension. A medium-bodied, bright, refreshing wine with a brilliant mineral background.
