About Billecart-Salmon Le Rosé
Among the attractions and surprises offered at the 1889 Paris Universal Exposition was champagne. Specifically, the Champagne Wine Trade Union (a precursor to the current AOC Champagne) was one of the financiers of the Palace of Champagne—within the Agriculture and Food pavilion—which served as a showcase for this renowned sparkling wine produced in the northwest of France. Among the bottles uncorked at this event were those of Billecart-Salmon.
Today, seven generations later, Billecart-Salmon remains an icon. Its origins date back to 1818 when Nicolas François Billecart married Elisabeth Salmon. From this union emerged these sparkling wines, among which Billecart-Salmon Le Rosé stands out.
This particular champagne, considered for years as secondary and of little prestige, was revived in 1970 by Jean Roland-Billecart. Today, it is one of the flagship wines of the house. “The first time I had the opportunity to taste the Brut Rosé cuvée was a long time ago, with Alain Passard (three Michelin star chef). What I liked first is that it tastes like wine. You can tell that behind this champagne there is a good wine,” says Pierre Hermé, master pastry chef (considered the best in the world).
Billecart-Salmon Le Rosé originates from the 300 hectares stretching between the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne. In this area, located just at the northern limit for vine cultivation (Reims is at 49°5 north latitude while the limit for obtaining quality grapes in the northern hemisphere is at 50° latitude), it is influenced by a dual climate: mostly oceanic (with high rainfall), but with a continental tendency (hot summers and frosty winters). Within this complexity, its slate soil is the key element, with a porosity that makes it a natural water reservoir that aids the vine even in the hottest summers. This, known as water stress, forces the plant to make an extra effort, resulting in high-quality grapes with a perfect balance between acids and sugar. Later, in the winery, all of them will be vinified always under the house motto: “prioritise quality, aspire to perfection.”
This is achieved in Billecart-Salmon Le Rosé with a technology based on cold to maintain all the expressiveness, nuances, and characteristic of the terroir. Always individually and separately, the batches from each plot will be clarified and fermented at low temperature in small stainless-steel tanks, ensuring a slow process where aromas are extracted, and the maximum expression of the varieties is retained. However, the journey of Billecart-Salmon Le Rosé does not end here. After malolactic fermentation and the second fermentation in the bottle, Billecart-Salmon Le Rosé will spend 36 months on the lees. The final resting place for Billecart-Salmon Le Rosé will be in the chalk cellars, where the perfect atmosphere is created for this champagne to reach the excellence we have come to expect.
