In Greece, native varieties have a lot to say for themselves. If anyone knows this it is Eric Asimov, a journalist and wine critic for The New York Times who has fallen for Limniona, a grape that grows in Central Greece, specifically in the P.G.I Tyrnavos (near Thessaly). Here it is masterfully produced in the Zafeirakis cellars where Zafeirakis Limniona New Age is born.
Zafeirakis Limniona New Age is a very fine red wine that perfectly expresses the terroir where it flourishes. The Zafeirakis winery has been cultivating 12 hectares of vineyards (between 10 and 12 years old) for more than a century, growing on sandy-clay soils with high calcium and flint content, which in some areas have great resistance to drought. All these elements are taken care of and respected to the maximum in this winery where the latest generation, Christos Zafeirakis, has been committed to a totally biodynamic and environmentally friendly approach since 2005. This means that the clusters are protected with natural remedies, like the famous Preparado 500 (better known as cow horn). This remedy, which is prepared with buried manure from October to April, seeks to promote life in the soil. This peculiar and unique soil mix is wonderful, as it retains the water from the scarce rainfall, providing reserves for the vines during the area’s dry and hot summers.
Zafeirakis Limniona New Age is harvested in September, the optimum point of ripeness, and fermented in wooden tanks (between 3,000 and 5,000 litres). This process, where the must becomes wine, starts spontaneously thanks to the native yeasts, and ends with a maceration of 20 to 25 days, where all possible colour is extracted from the Limniona. Finally, after devatting and pressing, where the wine is separated from the pomace, Zafeirakis Limniona New Age begins aging in barrels (between 1,200 and 2,400 litres), where it also undergoes malolactic fermentation. A discovery not to be missed!
