Two of these interesting producers are Jonahnnes and Christoph, the latest generation of the Weingut am Schlipf Schneider winery, who are the creators of Weingut am Schlipf Schneider Weil am Rhein Ortswein Spätburgunder. On their 15 hectares (spread over some 70 plots on the Tullinger Berg mountain), they have been able to get the most out of Pinot Noir. Their secret: organic cultivation and minimal intervention.
Weingut am Schlipf Schneider Weil am Rhein Ortswein Spätburgunder starts life on the southwestern slope of Tüllinger Berg, a vineyard lying near the border between Alsace, Basel and Switzerland. Nearby, where limestone soils abound, are the villages of Haltingen, Ötlingen and Altweil. This estate lies within a nature reserve, and it’s not just vineyards growing there; there are also forests, plants and other animal species that make this corner unique. And so, from a unique place, you can’t help but make a unique wine.
Weingut am Schlipf Schneider Weil am Rhein Ortswein Spätburgunder is harvested by hand and delivered to the winery. It is processed, vatted and that’s about it. From this point on, the wine must follow its own course, without intervention, and fermenting spontaneously with native yeasts. Once the process is finished, Weingut am Schlipf Schneider Weil am Rhein Ortswein Spätburgunder will rest on lees for 18 months in wooden barrels. And finally it is bottled.
