About Waipara Springs Sauvignon Blanc
Waipara is a picturesque valley located in the Canterbury region of New Zealand’s South Island. This is one of the country’s main wine regions where grapes like Pinot Noir and Riesling do very well. It is in the heart of this valley that the Moore and Grant families settled in the 1980s and together planted the first vines for their Waipara Springs Estate winery. A family business that is now in the hands of the third generation and whose wines are enjoyed both inside and outside New Zealand.
But if this winery stands out for one thing, it is for the unique wines produced by its original terroir. Derived from a prehistoric lake bed in the centre of the Waipara Valley floor, the vineyard soils are a rich mixture of clay and limestone. Similarly, the temperature difference between day and night, combined with relatively low rainfall, provide the perfect conditions for high quality fruit. And this is clear to see in Waipara Springs Sauvignon Blanc, a white wine made from one of the star varieties of the Waipara Valley: Sauvignon Blanc, which is grown using organic principles and without the use of chemical products. When the grapes reach the winery, they are destemmed and gently pressed to create a pure must that is racked into stainless steel tanks. This is where it begins fermentation with selected yeasts and is kept on the lees before bottling.
Citrusy, fragrant and mineral, Waipara Springs Sauvignon Blanc is an elegant expression of Sauvignon Blanc. A most gastronomic New Zealand wine.

Waipara Springs Sauvignon Blanc 2019 is an aromatic white wine with fragrant notes of tropical fruit, citrus and herbal hints. The palate is lively, crisp and balanced. A juicy wine with good acidity and a very interesting intense chalky finish. |
