About Vivaltus
To comprehend the saga of Vivaltus, one must journey back several generations to the Yllera family and their profound connection with the vineyards of Castilla y León.
It was during the 1970s that brothers Jesús and Pepe Yllera took a pivotal step by deciding to bottle their own wines. Years later, the project would gain a crucial ally in the form of the Rioja winemaker Ramón Martínez, better known as Montxo. The trio shared the ambition of crafting quality wines capable of expressing the full character of Ribera del Duero. Their commitment soon led them to take control of the old cooperative of Boada de Roa.
However, the story did not end there. In 2015, under the guidance of the next generation, the Yllera family acquired Vivaltus, marking the beginning of a new chapter and, above all, a novel way of interpreting the landscape of the prestigious Golden Mile. To achieve this, they enlisted two internationally renowned figures: the French winemaker Jean-Claude Berrouet, celebrated for his role in creating the esteemed wines of Pétrus, and his son Jeff, also a winemaker.
From the heart of the DO Ribera del Duero, this Vivaltus originates from a meticulous selection of old vineyard plots located in iconic municipalities such as Curiel de Duero, Anguix, and Roa. The vines thrive at dizzying altitudes ranging from 850 to 1,000 metres above sea level, a privileged position where the soils blend clay-limestone layers with areas of gravel and pure limestone. The climate is distinctly continental, characterized by cold winters, hot summers, and a significant diurnal temperature variation that allows for slow ripening, preserving impeccable acidity and natural freshness.
The predominant variety is tempranillo, also known as fino de la Ribera, complemented by subtle touches of cabernet sauvignon and merlot. Adhering to a respect for the surrounding biodiversity, cultivation is conducted through sustainable agriculture and meticulous manual harvesting.
The production of Vivaltus aims to interpret the grape with almost surgical precision, prioritizing finesse over extraction. Once hand-picked in small crates, the bunches are meticulously selected and destemmed, separating the berries from the stalk or woody structure of the cluster. The must undergoes alcoholic fermentation, the process in which yeasts convert sugars into alcohol, in stainless steel tanks and wooden vats at controlled temperatures. During this time, gentle and delicate macerations are practiced to extract only the noblest and silkiest tannins.
After completing the malolactic fermentation, the biological transformation that softens the wine's acids, the liquid undergoes a slow maturation in French oak barrels, mostly second-use, to refine its texture and complexity without masking the pure fruit character of the grape.
Vivaltus is a fluid, profound red wine of extraordinary elegance, where notes of fresh black fruit, floral reminiscences, and hints of fine spices meld into a velvety and vibrant palate. The result of the alliance between two great viticultural legacies.
