Tim Hillock Paradiso Syrah 2022 is a red wine that captivates with its deep, brilliant red hue. On the nose, it unveils a complex interplay of blackberries and black cherries, interwoven with spicy notes of black pepper and a hint of smoke. On the palate, it boasts a remarkable body and structure, with smooth tannins and a balanced acidity that impart elegance. A prolonged finish perfectly completes its concentrated profile, leaving a memorable impression.

About Tim Hillock Paradiso Syrah
If there is a wine region where energy is pure innovation, it is undoubtedly Swartland in South Africa. Located approximately 50-100 km north of Cape Town, this land of hills and plains, blessed with a warm and dry Mediterranean climate, has become the epicenter of a winemaking revolution. Its name, which means "Black Land" in Afrikaans, pays homage to the dark vegetation that covers its mountains after the rains. However, what truly defines Swartland today is the collaborative spirit of its producers, where young and veteran winemakers work together, sharing knowledge and passion for wine.
One of them is Tim Hillock, who has transformed the small family farm he owns in Kasteelberg into a space where creativity flows freely. There, he shares experiences and a winery with Donovan (Rall Wines) and Jolandie (Wolf and Woman Wines), two key figures in this new wave of winemakers committed to minimal intervention oenology. Their philosophy is clear: the vineyard and the wine must speak for themselves, authentically reflecting the land from which they originate.
An example of this is found in Tim Hillock Paradiso Syrah, a true expression of the terroir of Swartland. The Syrah grapes come from a single vineyard with iron-rich soils, on a dry-farmed estate cultivated according to natural and environmentally respectful principles. The harvest is conducted manually at dawn, carefully selecting the best clusters, which are then chilled for a few hours before processing. The whole clusters are gently crushed in a concrete tank to release some juice, followed by a natural fermentation without added yeasts. After this process, the wine rests for 10 months in a 2550L foudre and three old 225L oak barrels, which impart depth and complexity without concealing its pure character.
The result is Tim Hillock Paradiso Syrah, a structured red wine with an intense bouquet that encapsulates both the essence of Swartland and the vision of this new generation of winemakers well worth discovering.
