The story of this beverage dates back to 2019 when, after several years of research, the market welcomed the first bottle produced by the company led by Natalie Chiu and Charlie Winkworth-Smith. However, the true origin of this idea can be traced much further back, several years earlier, when this couple—who met while pursuing their doctorates in Flavour Chemistry at the University of Nottingham—visited a luxury restaurant to celebrate their birthdays. During that occasion, where the pairing was a focal point with explanations and anecdotes about the wines from the sommelier, Natalie was unable to fully enjoy the experience due to her intolerance to wine. That moment was the seed of what has now become one of the most original alcohol alternatives, where Natalie (who has been drinking tea since childhood) applies her knowledge of this ancient beverage. 
 
As its name suggests, Saicho Jasmine Sparkling Tea is crafted from green tea leaves grown in Fuding, China, which have been hand-picked and cold-brewed for 24 hours. This aspect of the process is quite similar to wine, as, like grapes, low temperatures help extract the most delicate and complex flavours. Finally, Saicho Jasmine Sparkling Tea is balanced to harmonise sweetness and acidity, culminating in its final touch with bubbles.
