About Quartomoro Z Frizzante Sui Lieviti
Experiments, tests and innovations. The Quartomoro Sardinian winery could be described as a true wine laboratory where Piero Cella and his wife Luciana do all their experiments and everything else they can think of. Quartomoro Z Frizzante Sui Lieviti, a sparkling wine, came out of a curiosity to blend some of the 2011 base wine (already bottled) with the must from the following year. The result couldn’t be better!
Thanks to ideas like these, Quartomoro has become a small company that is always up to date, always on the cutting edge, constantly evolving, at the forefront of innovation, but with one small caveat: they never forget their origins or Sardinian viticulture. With this in mind, winemaking on this Italian island is always based on tradition and respecting native, cultivating the area’s native varieties like Cannonau, Monica and Vermentino.
The latter is used to make Quartomoro Z Frizzante Sui Lieviti. The Quartomoro vineyards are located in Arborea, in the province of Oristano, and grow on mixed soils with clay and sand. With a high yield per hectare, the vines, planted in 1985, are harvested by hand and the bunches are placed in crates. After a gentle pressing and racking, where the must is left to settle at low temperatures, Quartomoro Z Frizzante Sui Lieviti ferments spontaneously with selected yeasts in stainless steel tanks.
Quartomoro Z Frizzante Sui Lieviti will spend six months in these tanks. This aging is complemented by 10 months in the bottle. The base wine is left to rest for the first four months and, after this time, 5% of the white must is added, and this is the catalyst for the second fermentation. With bubbles and lees, Quartomoro Z Frizzante Sui Lieviti spends six months in the bottle, ready to be released for sale. Long live experiments!
