Ossian is a single-variety Verdejo white wine produced by the Ossian Vides y Vinos Winery (in Segovia, Spain), a project owned by the Pago de Carraovejas winery.
The Ossian vineyards are located in Nieva, Segovia, planted in mostly sandy loam soils. It was because of this special texture that the phylloxera plague could not take root in the area, so the vines are ungrafted, a centuries-old sign of a valuable winemaking heritage and now cultivated using certified organic farming methods.
To make Ossian, the grapes are harvested by hand and selected in the field and in the winery. The clusters rest in a cold chamber and are lowered to 5 degrees in order to preserve all the organoleptic characteristics of the fruit. The grains are pressed gently and the free-run juice ferments with its native yeasts in different sized wooden barrels and foudres.
The wine is aged in barrels with its lees undergoing occasional batonnage over nine months.
