Nicolas Maillart Les Chaillots Gillis Premier Cru Blanc de Blancs 2014 is a dry sparkling wine (less than 6 g/L sugar) that is bright yellow in colour, with fine, elegant and very persistent bubbles (typical of its long aging). The rising string of pearly bubbles are just the beginning of a very special experience, this wine is perfect for pairing with food and has powerful citrus (orange), toasted and mineral notes that are so characteristic of the region’s soil. The palate is fresh and vinous, with body and volume. Well balanced. The finish has a strong hint of liquorice.

Nicolas Maillart Champagne Les Chaillots Gillis 1.er Cru Blanc de Blancs is a sparkling wine made by Nicolas Maillart in the A.O.C. Champagne. Nicolas, who is the ninth generation of a family of winegrowers, has moved towards Les Chaillots and Gillis, two premier cru plots in Ecueil, in the north of the A.O.C. Champagne, in the Montagne de Reim. As we have said these lieux-dits are known for their unique characteristics, and for Les Chaillots and Gillis, this uniqueness comes from their old vines facing south on a hillside, planted in the middle of the vineyard on clay and loamy soils, with some traces of limestone sand (in the case of Gillis). These modest soils, formed by the accumulation of marine sediments that retain water perfectly, are home to the Chardonnay, one of the three leading varieties in the denomination that grow under the influence of both an Atlantic and an oceanic climate with contrasting temperatures and achieving a great balance of acidity and sugar.

Following manual cultivation taking an organic approach and avoiding chemicals, the clusters are taken to the winery where they are processed in the same way, always seeking minimal intervention and the maximum expressiveness of the terroir.
