Such is the case with Mathilde Chapoutier Côtes de Provence Grand Ferrage Rose, a rosé wine originating from vineyards nestled at the base of the Sainte Victoire and Aurélien mountains in Provence, France, which benefit from a rich variety of sun exposures. It is a blend of Grenache, Syrah, and Cinsault varietals, cultivated in poor, shallow soils composed of limestone and clayey sandstones. Organic practices are employed to utmost respect the natural balance of the terroir, and following mechanical harvesting at night, the grapes are transported to the winery where they undergo a brief period of cold maceration. Subsequently, the alcoholic fermentation commences in stainless steel tanks at low temperatures using indigenous yeasts. The wine is then left to mature on its lees in the same tanks for 5 months.
