About Les Foulards Rouges Le Fond de l'Air est Rouge
Vineyards of 80 years, carbonic maceration, and aging in stainless steel tanks. Can anyone top that? With Les Foulards Rouges Le Fond de l'Air est Rouge the stakes are high.
Jean-François Nicq goes all-in with this natural red wine, crafted in the Piémont des Albères, in the south of France, along the natural border with Spain. To this part of the Languedoc Occitanie, in the Eastern Pyrenees, this French winemaker has relocated, focused on a far more personal venture. After a tenure of over a decade at the cooperative in Estezargues, in the Côte du Rhône, Nicq has settled in this quaint nook, with about 15 hectares, where he aims to extract the best while utmost respecting the terroir and producing natural wines. This entails capturing in his bottles the essence of sandy and granite soils and the Mediterranean climate, with hot summers tempered by the influence of the sea (less than 10 km away).
The pursuit of fruitiness and freshness are his hallmarks. Thus, from cultivation to bottling, Les Foulards Rouges Le Fond de l'Air est Rouge is treated with the utmost respect. Harvesting is done by hand, with great care, in 13-kilogram boxes. No one wants to spoil the bunches, -where only natural fertilizers have been used and which have been manually tended-. Upon arrival at the winery, Les Foulards Rouges Le Fond de l'Air est Rouge is processed and placed in vats where it will undergo carbonic maceration. During this fermentative process, where whole bunches are placed intact and unstemmed, the clusters at the top crush those underneath, causing them to break and release the juice that will start fermenting. This will last about fifteen days and will be carried out by indigenous yeasts. Once complete, Les Foulards Rouges Le Fond de l'Air est Rouge will be racked, pressed, and kept in stainless steel tanks, where it will age for approximately half a year.
In this project, Jean-François Nicq pays tribute to Chris Marker and his work Le fond de l'air est rouge, the documentary that lends its name to his red wine. Just as no one should miss this masterpiece, no one should miss this wine. It is a benchmark to be experienced at least once in a lifetime.
