Initially, we master the art of crawling, thereafter we progress to walking, and ultimately we sprint. Such is the nature of progression. This very sequence can be analogously applied to other facets of life. Every expert was once a novice. Yet, in the realm of wines, Kevin Descombes circumvented the entire progression: in his case, this youthful prodigy took flight directly, soaring to the zenith with his white wine K. Descombes Beaujolais blanc.
 
Before reaching the age of 30, he resolved to leave the nest (and did so on excellent terms). Why should he linger, awaiting the inheritance of his father's vineyards, the esteemed Georges Descombes? Thus, in 2013, he struck out on his own, astonishing critics and oenophiles across the globe in equal measure. It was evident that the young vintner was making a bold entrance.
 
On this occasion, with K. Descombes Beaujolais blanc, Kevin Descombes momentarily sets aside the red varietals you are so familiar with—such as gamay—and ventures into the realm of chardonnay, one of the lesser-known gems of the A.O.C. Beaujolais. Presently, this varietal constitutes a mere 2% of the vineyard acreage in the region, with an increasing number of vintners embracing its cultivation. Kevin Descombes is among this group, where the focus is not only on fostering new varietals but also on committing to natural cultivation and vinification processes that are environmentally considerate. Here, all tasks are performed manually and, despite the absence of any formal certification, their six hectares of vineyards have been free from chemical products for decades. This is primarily due to the fact that four of these hectares were once overseen by his father Georges Descombes, one of the trailblazers in the production of natural wines in the southern region of Burgundy.
 
In the winery, K. Descombes Beaujolais blanc is pressed immediately upon arrival, and the juice is transferred to fermentation tanks, where it remains for roughly two weeks. It is noteworthy that the fermentation occurs spontaneously, utilizing indigenous yeasts. These microorganisms, unique to the terroir of Beaujolais, are of paramount importance to Kevin Descombes, for without them, the wine would be devoid of any distinctive character. Ultimately, K. Descombes Beaujolais blanc is bottled and released for sale.
