“My job is to preserve the unique character of each particle, walk alongside the wine and ultimately find its expression in each bottle.” Under this promise Vincent Laval, president of the Association of Champagne Organic Producers, presents a range of sparkling wines from the Premier Cru de Cumières, at the beginning of the Marne Valley, where low yields, excellent maturity and purity of the terroir are paramount. All this work, following in the footsteps of his father Georges Laval, allows us to enjoy the aromas and flavours of a unique clay-limestone soil.
Georges Laval Les Hautes Chèvres is a sparkling wine born on the Cumières hill, a village classified as Premier Cru. A cuvée from the Laval family’s oldest Pinot Meunier vines planted between 1965 and 1967. The vines are grown organically and following biodynamic principles. When the grapes reach optimum ripeness, they are harvested manually and taken to the winery. There it is selected, destemmed and pressed and the resulting must is fermented and aged for 8 months in oak barrels. It then undergoes a second fermentation in the bottle, following the traditional method, where it remains on its lees for 4 years before being disgorged.
As a result, Georges Laval Les Hautes Chèvres is a sparkling wine full of personality, it is very expressive with vibrant minerality. Undoubtedly one of the region’s top champagnes.
2017 | Georges Laval Les Hautes Chèvres 2017 is a creamy sparkling wine with aromas of white fruits, citrus notes and floral hints accompanied by pastry notes. The palate is vinous, intense and complex. A champagne with harmonious minerality and persistent acidity. The finish is long and clean. |
