Dominio del Soto Reserva 2019 is a richly concentrated red wine, boasting expressive aromas of blackberry, currant, and nuanced hints of oak such as cocoa and vanilla. About Dominio del Soto Reserva
Discussing Chapoutier is to engage in a conversation about wine. Yet, while the name is initially and quite rightly associated with the Rhône Valley (France), this lineage, boasting eight generations of winemaking expertise, is not content with merely crafting exceptional wines within this illustrious region. Mathilde Chapoutier, the current custodian of this heritage, has been instrumental in the pursuit and identification of outstanding vineyards beyond the borders of France. An unrelenting quest for perfection in the vinicultural arts has led her to Dominio de Soto. This winery, nestled in Sotillo de la Ribera, within the province of Burgos and part of the esteemed D.O. Ribera del Duero, boasts a 16-hectare vineyard whose profound knowledge and expertise yield wines that are a pure reflection of the terroir.
Thus, we are introduced to Dominio del Soto Reserva, a red wine crafted from tempranillo grapes originating from vineyards perched on ancient terraces at altitudes ranging from 850 to 900 meters. Old vines are rooted in deep clay-limestone soils, interspersed with marl in certain plots. The viticulture is organic, adhering to time-honored and biodynamic methods, with the vines benefiting from the significant diurnal temperature variation. When the grapes reach their optimal ripeness, they are hand-harvested in 20-kilogram crates. In the winery, the selected and destemmed grapes undergo a period of cold maceration. Subsequently, fermentation occurs with indigenous yeasts in stainless steel vats for over four weeks. The wine is then aged, partially in stainless steel vats and partially in French oak barrels for 3 to 6 months. Once bottled, it matures for an additional 12 months in the cellar before its release to the market.
