Dominio del Águila Reserva is a red wine from Ribera del Duero produced by Dominio del Águila in the town of La Aguilera, Burgos.
Dominio del Águila is a winery founded by Jorge Monzón and Isabel Rodero in 2010. Jorge started his oenology studies in Burdeos and continued his professional career in emblematic wineries like Romanée-Conti and Vega Sicilia before ending up at the Arzuaga wineries.
They cultivate 30 hectares of eco-friendly vineyards and the Tempranillo is the main variety planted with others such as Bobal, Garnacha and Albillo on sandy-clayey-rocky soil depending on the plot.
This old vineyard is more than 85 years old and is situated in the same town of La Aguilera. It is planted on sandy-lime soil 900 metres above sea level. Tempranillo is the main variety in the vineyard, but being an old vineyard, there are also other minor varieties present such as Bobal and Albillo between the grapevines.
Dominio del Águila Reserva ferments and macerates the whole plot at the same time in stainless steel tanks and with its own yeast. With a lengthy maceration process, it is decanted into French oak barrels where malolactic fermentation and a later 35 month ageing is carried out.
Dominio del Águila Reserva is an aged wine, with an enormous complexity which will continue to evolve over the years.
