About Domaine Schaller Chablis
In recent years, there has been a surge in the popularity of Chablis, a crisp dry white wine produced in the Burgundy region of France from Chardonnay grapes. This trend has given rise to a new wave of vintners who are crafting this wine with a commitment to high quality and sustainable practices, aiming to achieve a more complex and full-bodied flavour profile. Presently, the market boasts exceptional Chablis wines, offering an exhilarating style for oenophiles. Among these trailblazing producers is Camille Schaller, a young winemaker who adheres to these principles to create outstanding Chablis from her family's vineyards located in the vicinity of the villages of Préhy and Chablis.
Thus, Domaine Schaller Chablis is a white wine that hails from 30-year-old Chardonnay vineyards planted in the finest clay-limestone soils. Organic practices are employed to preserve the natural equilibrium of the terroir, and the grapes are hand-harvested at the peak of ripeness. In the winery, the grapes are immediately gravity-fed into a pneumatic press where they are gently crushed to achieve optimal juice extraction without the risk of oxidation. The must is allowed to settle for 12 to 24 hours before initiating both alcoholic and malolactic fermentation with indigenous yeasts. Finally, the wine is matured on fine lees for 8-10 months in stainless steel vats.
