In Jura, in eastern France, the Ganevat family has been crafting their story for centuries, but it is Jean-François—“Fanfan” to his friends—who has elevated the project to a near-silent cult status. After training in Burgundy and returning to the family estate in La Combe de Rotalier, he decided to view the vineyard with a different sensitivity: biodynamic, minimal intervention, and a way of working that borders on the artisanal in every detail.
 
Domaine Ganevat Les Varrons Vieilles Vignes is a white wine crafted from Chardonnay from very old vines, but the important thing is not the technical sheet, rather the sensation of a wine constructed with time. It ferments spontaneously and rests for years in used wood, unhurried and without corrections, allowing the wine itself to find its balance. In the glass, it reveals a broad yet precise texture, with a freshness that doesn't seek to attract attention, but to linger.
