About Charlopin-Parizot Chablis
New oak or old oak? That is the question. For years the debate in the A.O.C. Chablis has been which type of wood is the best for aging its wines. Whether it is down to fashion or purely technical aspects, what we do know is that each winegrower fiercely defends the best option for their wines in a decisive stage, where all the work and effort put in up to that point is at stake. While old oak aerates and enriches the wine without adding too many flavours or aromas, new oak will bring vanilla. The purest and cleanest expression is reserved for stainless steel (another option that has also been in the equation for years). Between the more dogmatic approaches and the more unique styles, with the combination of both materials, things go well. In the latter category is Philippe Charlopin.
Recognised as one of the most representative figures of Burgundy, Philippe Charlopin is one of the greatest masters who knows perfectly how to combine new wood with old wood. He knows what each wine needs. His winemaking style has gone through several phases: between the 1980s and 1990s he preferred new oak, then switched to old oak and finally, today, he uses a balance between the two. Experience is always a process (with age comes wisdom) and Phillippe Charlopin has managed to hit the nail on the head with Charlopin-Parizot Chablis.
The A.O.C. Chablis is one of the terroirs Philippe Charlopin focuses his efforts on. A native of Gevrey-Chambertin, this winegrower is currently working side by side with his son, Yan Charlopin. And together they are writing a new chapter in the history of wine. Always following a biodynamic style, where the ecosystem is very well looked after, working manually and in an artisan way, as tradition states. Philippe Charlopin is a true encyclopedia of the past! And he is also a spectacular fount of knowledge of the current situation across the whole region!
In the winery, Charlopin-Parizot Chablis is vinified minimally, without major interventions, to ensure that the work in the vineyard (where the Chardonnay has been highly respected), is well reflected in the wine. This is a pure expression of the terroir and Jurassic soils, from the Kimmerridgean period, formed by the remains of oysters deposited by the sea. This element, which is completely unique, is what gives the mineral character that is so typical of this area’s wines. This touch is the one that they hope to preserve and enhance during aging. Here a real dance of materials and resting times will come into play, where each container contributes its best qualities to a greater or lesser extent. In this step Philippe Charlopin really stands out, he is a true expert who, like a master orchestra conductor, directs each of the processes until Charlopin-Parizot Chablis is perfect, with everything as it should be.
