About Charlopin-Parizots Morey St. Denis
As Dr. Lavalle wrote in 1855, “it can be said that it lacks nothing”. The red wines made in the A.O.C. Morey-Saint-Denis are (almost) perfect. Slowly, between the A.O.C Gevrey-Chambertin and the A.O.C. Chambolle-Musigny, this denomination has made a name for itself. From bottling its wines under other denominations, this corner of the Côte de Nuit (in the north of Burgundy) has become the star of every label. It has taken time and work. Before anyone else, they themselves had to start believing in the quality of this area, which is home to five grands crus. One of these winegrowers, who was able to see this from the beginning, is Philippe Charlopin.
Gevrey-Chambertin, Fixin, Marsannay and Chablis are some of the territories where Philippe Charlopin works his magic. Now, the A.O.C. Morey-Saint-Denis joins this list. Here, this leading Burgundy producer experiments with Pinot Noir and its clay-limestone soils, producing the Charlopin-Parizots Morey St. Denis red wine. A biodynamic approach guides Philippe Charlopin, who is assisted in this work by his son Yann. They both carry out all the tasks manually, always respecting each plant and living being in the vineyard, just like they did in ancient times. The grapes are harvested by hand, yields are monitored at all times and both will personally monitor ripening.
In the winery, the process will be very similar, always seeking a minimal intervention vinification, where both the wine and the grape variety are allowed to express themselves fully. This is the only way to ensure that all the work done in the vineyard is not covered up or concealed. The fermentation of Charlopin-Parizots Morey St. Denis is spontaneous, using native yeasts, in stainless steel tanks. Once this process has been completed, Charlopin-Parizots Morey St. Denis is aged in wooden barrels, where Philippe Charlopin combines new and used containers. This step is crucial, because this is where Philippe Charlopin is an expert.
