About Clos Dominic Vinyes Baixes
Clos Dominic Vinyes Baixes is a barrel-aged red wine made from the Cabernet Sauvignon, Merlot, Picapoll, Garnacha Tinta and Cariñena varieties by the Clos Dominic winery in the D.O.Q. Priorat.
Clos Dominic is a small project that was set up in 2002 by the couple Dominic Bairaguet and Paco Castillo. Located in Porrera, a village in the heart of Priorat (Tarragona), they grow their own vines and make their own wines. An artisan work that is only carried out by family members to ensure maximum quality in each of their products.
Clos Dominic Vinyes Baixes comes from old vines planted in the lower part of the Estate. A total of 7 hectares lying at an altitude of 430 metres and aged between 60 and 100 years old. They use respectful agriculture with organic and biological products. The harvest is carried out manually in small boxes and the best clusters are selected in the vineyard itself.
Once the Clos Dominic Vinyes Baixes grape has been harvested, it reaches the winery in under 3 hours ready to begin the winemaking process. It macerates for a month and ferments spontaneously with native yeasts in stainless steel tanks. The wine is then aged for 16 months in French oak barrels. Finally, it is gently filtered, bottled and allowed to rest a few months before going to market.
Clos Dominic Vinyes Baixes is a coupage of the different varieties grown by this winery. The Picapoll a grape is almost in danger of extinction in the area. In short, this is a wonderful Priorat wine.

2008 | Intense and full wine that coats the mouth with the same feelings found in the nose. The notes of licoriced fruit and the balsamic touches along with its good acidity freshen this wine, rounding out the palate. Very good, long and persistent finish.
A very tasty, elegant and balanced wine. Enjoy it! Nice red colour with maroon edges. Medium-high robe and abundant tears. Intense and mellow aromas among which the expressive notes of red fruit are noticed from the first nosing. The wooden aromas seem to be very well integrated and provide the wine with creamy toasted notes and sweet spices (vanilla, chocolate). A touch of varnish and herbal nuances are also noticed on a deep mineral, very slaty background. |
