About Brimoncourt Extra Brut
There has been a pivotal moment in the history of Brimoncourt. The champagne house, nestled in the heart of the AOC Champagne, specifically in Aÿ, boasts over three centuries of heritage. However, in recent times, its production had been waning until it ceased entirely in 1950. This nearly lost legacy was revived thanks to the intervention of Alexandre Cornot, an art dealer who, after returning from New York, decided to purchase the estate in 2014 with the aim of rejuvenating the brand. This goal has been fully realized with the introduction of a range of sparkling wines that are concentrated, elegant, and contemporary, which have been released annually ever since.
Regarding Brimoncourt Extra Brut, a champagne crafted from pinot noir and chardonnay, it hails from 6 plots classified as Grand Crus located in the communes of Aÿ, Ambonnay, Bouzy, Oger, Le Mesnil-sur-Oger, and Cramant. Given these unique terroirs, there is an emphasis on preserving biodiversity and the natural balance of the vine. The vinification process in the cellar follows the traditional or champenoise method. Initially, the must ferments in stainless steel vats at a controlled temperature, followed by a secondary fermentation in the bottle. The champagne matures on its lees for a minimum of four years. Eventually, it is disgorged, with a dosage of 2 grams per liter added.
The result of a modern Brimoncourt that eschews trends and fads, Brimoncourt Extra Brut offers everything one needs to appreciate the quality of the exceptional terroirs of the AOC Champagne. It is an essential experience to savor the savoir-vivre so ardently advocated by its mentor.
