About Aoton Lola Retsina Rosé
Greece, one of the world's oldest vineyards, has been chiefly instrumental in spreading the vine and the culture of wine throughout the Mediterranean. Bestowed by Dionysus, the god of wine and revelry, wine has played a pivotal role since ancient Greece. Its most renowned wine is Retsina, a flavored wine whose origin dates back to ancient times when this product was transported in baked clay amphorae and sealed with a mixture of plaster and resin. This method prevented contact with oxygen. However, at that time, it was believed that the miracle of the wine's preservation came from the resin. Hence, resin began to be added to the wine, resulting in its unique aromatic character. Aoton Winery, a winery whose name defines the finest specimen of its class in ancient Greek, carries on this historic practice and introduces us to Aoton Lola Retsina Rosé, the perfect amalgamation of madness and tradition.
Its creator, oenologist Sotiris Ginis, continues to astonish. A fourth-generation viticulturist in the Attica region, he manages the vineyard with skill and care and, starting from the premise that beauty does not lie in seeing all vines the same, crafts Aoton Lola Retsina Rosé, a rosé wine from the PGI Retsina of Peania made with mandilaria and savatiano varieties. These vines thrive in a temperate Mediterranean climate with warm, dry summers and mild winters, and are cultivated using organic farming methods. Machinery is eschewed in favor of artisanal labor. The harvest is carried out at night because, as Sotiris himself explains, “between 2:00 and 4:00 in the morning, the grape transforms and becomes tighter and crunchier, unlike during the day when it is soft and spongy.” Once in the winery, fermentation takes place at controlled temperatures, and then part of the wine is aged on fine lees for 8 months while the other part ferments with pine resin from the Kouvaras forest.
